Easy Folded Kimbap

Put all your favorite veggies and protein in one bite with this folded kimbap! It's a delicious twist on a classic favorite, and this recipe is loaded with flavor and gut-friendly goodness, thanks to our Every Day Kimchi.

The best part? You can make it your own, fast! Add grilled chicken, shrimp, tofu—whatever you like. Throw in some crunchy cucumber, creamy avocado, or carrots. The possibilities are endless, so get to it!

 

 

 

Cooking time: 10 minutes 

Makes 1 folded kimbap

Ingredients 

  • 1/4 cup cooked rice
  • 1/4 teaspoon sesame oil
  • salt to taste
  • 1 seaweed sheet (aka laver, nori)
  • 2 tbsp kimchi (Doctor Kimchi - Every Day Kimchi
  • 2 tablespoons canned tuna or other cooked or processed meat
  • 1 fried egg (no runny yolk) 
  • Your choice of vegetables (e.g., lettuce leaf, cucumber; thinly sliced or julienned as necessary)

Steps

  1. Mix warm rice with a little bit of sesame oil and salt to taste.

  2. Press the liquid out of the canned tuna. If using leftover cooked meat, you can heat it in the microwave as necessary.

  3. Clean and pat dry the vegetables with a paper/kitchen towel. Thinly slice the cucumber or carrot. You can lightly sauté the cucumber or carrot, but not necessary. Thinly slice the kimchi and squeeze out the liquid. 

  4. Put a sheet of nori, shiny side down and shorter side towards you on a cutting board or plate. Cut a slit to the middle from the short side.

  5. Spread the rice evenly over the bottom left quarter of the seaweed sheet. Arrange the other ingredients in each quarter. Lift the bottom left quarter and fold it onto the top left quarter, then to the top right, and finally to the bottom right. Press lightly and tuck the filling in after each fold.
