Kimchi Salad Bowl with Peanut Sauce

In ten minutes or less, you'll enjoy a delicious and nutritious meal bursting with flavor and color! Feel free to replace with other vegetables/protein of your choice.

Makes 1 portion


  • 3 tbsp kimchi (Doctor Kimchi - Weekend Kimchi)
  • 1/2 cucumber, sliced
  • 1/3 cup salad mix
  • 1/3 canned chickpeas
  • 1/2 carrot
  • 1/2 avocado, sliced
  • 1 egg (or substitute with choice of protein like tofu, tempeh, chicken etc.)
  • 1/2 cup cooked brown rice (optional)
  • Sauce of choice
  • Olive oil
  • Pinch of salt 
  • Pinch of pepper
  • Sesame seeds (optional)

Peanut Sauce

  • 2 tbsp peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1/4 tsp sriracha
  • 1/8 tsp maple syrup
  • 1 tbsp water


  1. Peanut sauce: In a small bowl, whisk together the peanut butter, lime juice, tamari, sriracha, and maple syrup. Whisk in water, 1 tablespoon at a time, to reach a drizzleable consistency. 
  2. (Optional) Sauté carrot in olive oil to soften it up. Add salt and pepper to taste. Set aside. Alternatively, use raw carrot. 
  3. Fry the egg and set aside.
  4. Assemble the bowls with the rice, kimchi, cucumber, salad mix, carrot, chickpeas, avocado and fried egg.

  5. Drizzle peanut sauce and sprinkle sesame seeds. Mix well.
