At Doctor Kimchi we don't talk about "lazy", but rather "efficient". This efficient recipe is our go-to when working from home when we only have 10 minutes between phone calls and need a quick, refreshing snack. You can use whatever bread you have on hand. Optionally, you can spice up the taste with lemon juice and kimchi shot.

Time: 10 mins

Ingredients:
  • 50 g kimchi ( Doctor Kimchi - Every Day Kimchi ) 
  • 1 avocado 
  • 2 tbsp lemon juice 
  • 3 slices of bread (preferably rye, sourdough) 
  • 1 tsp mayonnaise 
  • 1 kimchi shot ( Doctor Kimchi Shot )
  • Salt 
  • pepper 
  • Roasted sesame seeds for garnish (optional) 
  • Green onions, cut into 0.5 cm slices, for garnish (optional) 
Preparation:
  1. Mash the avocado pieces in a bowl with a fork. Add a teaspoon of mayo, 2 tablespoons of lemon juice and 1 kimchi shot. Mix everything together.

  2. Slice bread and toast (optional)

  3. Spread the avocado mixture on the bread 
  4. Garnish generously with kimchi 
  5. (Optional) Garnish with sesame seeds and green onions
