Kimchi Deviled Eggs

We love kimchi and eggs in just about any combination - scrambled, boiled, in ramen, in salad, the list goes on. Flavorful kimchi is the perfect companion to spice up the neutral taste of the eggs. Also nutritionally this combo is a winner - protein, vitamins, fiber and all low carb.

So, if you are aiming for maximum aesthetic effect in minimum time, this deviled egg recipe is a keeper. We usually make this combo when entertaining the guests - they double as a great start AND a conversation starter, and are enjoyed by mostly everyone. It's a great way to sneak some protein and fiber into my diet on a busy day — try it for yourself!

Steps

  1. Hard boil eggs, cool, peel, and slice lengthwise into halves. Scoop out yolks into a bowl. Place egg white halves on a serving plate.

  2. While the eggs are cooking, finely chop the kimchi.

  3. Using a fork, mash cooked egg yolks with mayonnaise. Add chopped kimchi and stir well. Add a bit of the kimchi shot until the yolk mixture reaches a creamy consistency. If the mixture still appears dry, add a little more mayonnaise and a few more drops of the kimchi shot.



  4. Garnish with sliced green onions and serve.
